Ingredients
- ¼ cup fresh cilantro, coarsely chopped
- 1/8 teaspoon salt
- 2 cloves garlic, peeled
- 2 large egg yolks
- ¼ cup olive oil
- 4 tomatoes \ \ \ \ \ \ \ "beefstake \ \ \ \ \ \ \" large, cut into ¼ inch slices

- 1 ¼ cups diced fresh pineapple
- 1 ½ cups fresh mango, diced
- 3 fresh basil leaves, cut into slices finite
Preparation
- To prepare Cilantro Aioli: Mix the cilantro, salt, garlic and egg yolks in a food processor or blender. Turn it up until the mixture is smooth.
- With processor or blender running, slowly add the oil.
- Whisk until thick and creamy.
- To assemble the salad, divide the tomato slices evenly into each of the 6 dishes. Top with the chopped mango and pineapple chopped into equal parts. Sprinkle with basil as well. Sprinkle with Cilantro Aioli equally and serve immediately.
