Caprese salad with tropical cilantro aioli


Inspired by the traditional Catalan sauce, this salad with cilantro aioli is extremely easy and irresistible.

Ingredients


  • ¼ cup fresh cilantro, coarsely chopped
  • 1/8 teaspoon salt
  • 2 cloves garlic, peeled
  • 2 large egg yolks
  • ¼ cup olive oil
  • 4 tomatoes \ \ \ \ \ \ \ "beefstake \ \ \ \ \ \ \" large, cut into ¼ inch slices
  • thickness
  • 1 ¼ cups diced fresh pineapple
  • 1 ½ cups fresh mango, diced
  • 3 fresh basil leaves, cut into slices finite


Preparation

  • To prepare Cilantro Aioli: Mix the cilantro, salt, garlic and egg yolks in a food processor or blender. Turn it up until the mixture is smooth. 
  • With processor or blender running, slowly add the oil. 
  • Whisk until thick and creamy. 
  • To assemble the salad, divide the tomato slices evenly into each of the 6 dishes. Top with the chopped mango and pineapple chopped into equal parts. Sprinkle with basil as well. Sprinkle with Cilantro Aioli equally and serve immediately.
