Another very popular delicacy in Peru

Ingredients:

  • 1/2 k bofe beef (lung)
  • 1 Kilo potato, peeled and cut into squares
  • 1 onion, diced
  • 2 sprigs of mint
  • 2 tablespoons crushed red pepper sauce
  • Mirasol pepper 1 tablespoon ground
  • 2 tablespoons minced garlic
  • 1/2 cup oil
  • 3 cups beef broth
  • Salt
  • Pepper
  • Cumin


TO SERVE:

  • Chopped parsley
  • Mote cooked
  • White Rice


Preparation

Preparation: Cook the lights into a pot with water and a sprig of mint. When ready, drain and chop into cubes. In another separate pot, heat oil and fry the onion, along with garlic, pepper sunflower, the red pepper sauce, salt, pepper and cumin. Bofe Incorporate the chopped mint and fry for a few minutes. Add the broth along with the potatoes, cover and let simmer until the potatoes cook. The stew should be juicy, served with white rice, cooked mote and sprinkle chopped parsley.
