Cup quick omelette


Easy to prepare this recipe is perfect for breakfast or a snack between meals.

Ingredients


  • 1 whole egg
  • 2 egg whites
  • 1/4 cup frozen spinach, chopped
  • 1/4 cup roasted red pepper, chopped
  • dried oregano to taste
  • salt and pepper to taste
  • 1 Tbsp. mozzarella cheese, grated
  • 1 tsp. Parmesan cheese, grated (optional)


Preparation

  • In a large cup of coffee you can put in the microwave, beat eggs with spinach, peppers, oregano, salt and pepper. Sprinkle mozzarella cheese on top. 
  • Put in the microwave for 2 minutes 30 seconds. The mixture to rise like a soufflĂ©. 
  • Remove and garnish with Parmesan cheese.
