Ingredients
- 1 lemon or Meyer lemon, juice and zest
- 1/4 cup olive oil
- Zucchini or yellow squash 3
- 1 Tbsp. chopped cilantro
- 1 Tbsp. chopped chives (chives)
- 1 Tbsp. chopped dill
- 4 oz. feta cheese, crumbled
- salt and pepper to taste
Preparation
In a small bowl, combine juice and zest, olive oil, salt and pepper. Mix well and reserve dressing in refrigerator 30 minutes.
Using a mandoline, slice the zucchini into slices 1/8 inch. Place the slices on a serving dish and season with salt and pepper between each layer of zucchini.
Add dressing and moves the plate to coat well. Top with chopped herbs and cheese.
