Ingredients
- 2 beets
- 4 cups mixed greens
- ½ cup cherry tomatoes, halved
- 1 cup grated carrot
- 1 cucumber, peeled and diced
- ½ cup feta cheese, diced
- salt and pepper to taste
- 1 tsp. olive oil
- Dressing
- 4 tbsp. lemon juice
- 2 tbsp. chopped parsley
- 1 shallot, finely chopped
- ½ cup olive oil
- salt and pepper to taste
Preparation
- Preheat oven to 400 º F.
- Place each beet on a piece of foil. Season with salt, pepper and ½ tsp. olive oil. Wrap well and put the beets on a baking tin or dish. Bake 40-45 minutes until tender and let cool completely. Wearing disposable gloves, peel the beets using hands, the skin is easily removed. Cut the beets into small cubes and remove to a bowl.
- Add lettuce, tomatoes, carrots, cucumber and feta cheese.
- In another bowl, combine lemon juice, parsley, shallot, salt and pepper. Add oil slowly and mix with a whisk.
- Pour dressing over salad and mix well.
