Beet Salad with festive


Recipe from Chef Aliza Stern, Producer for Delicious Cooking

Ingredients


  • 2 beets
  • 4 cups mixed greens
  • ½ cup cherry tomatoes, halved
  • 1 cup grated carrot
  • 1 cucumber, peeled and diced
  • ½ cup feta cheese, diced
  • salt and pepper to taste
  • 1 tsp. olive oil
  • Dressing
  • 4 tbsp. lemon juice
  • 2 tbsp. chopped parsley
  • 1 shallot, finely chopped
  • ½ cup olive oil
  • salt and pepper to taste


Preparation

  • Preheat oven to 400 º F. 
  • Place each beet on a piece of foil. Season with salt, pepper and ½ tsp. olive oil. Wrap well and put the beets on a baking tin or dish. Bake 40-45 minutes until tender and let cool completely. Wearing disposable gloves, peel the beets using hands, the skin is easily removed. Cut the beets into small cubes and remove to a bowl. 
  • Add lettuce, tomatoes, carrots, cucumber and feta cheese. 
  • In another bowl, combine lemon juice, parsley, shallot, salt and pepper. Add oil slowly and mix with a whisk. 
  • Pour dressing over salad and mix well.
