Vegetable soup with noodles

Ingredients


  • 2 tbsp. olive oil
  • 1/2 large yellow onion, chopped
  • 2 bunches of celery, chopped
  • 2 carrots, chopped
  • 1 red pepper, chopped
  • 1 clove garlic, finely chopped
  • 1 tsp. dried oregano
  • 1 cup broccoli florets
  • 8 cups vegetable broth
  • 2 cups egg noodles
  • salt and pepper to taste


Preparation

  • Heat the vegetable broth in medium saucepan. 
  • Heat oil in large pot over medium high heat. 
  • Add onion, celery, carrot and pepper. Sauté 3-4 minutes to soften and season with salt and pepper. 
  • Add garlic, oregano and sauté 30 seconds. 
  • Add the broccoli along with the hot broth and bring to a boil. Lower temperature and simmer 30 minutes. 
  • Add noodles and cook 15 minutes. Season with salt, pepper and serve.
