Ingredients
- 2 tbsp. olive oil
- 1/2 large yellow onion, chopped
- 2 bunches of celery, chopped
- 2 carrots, chopped
- 1 red pepper, chopped
- 1 clove garlic, finely chopped
- 1 tsp. dried oregano
- 1 cup broccoli florets
- 8 cups vegetable broth
- 2 cups egg noodles
- salt and pepper to taste
Preparation
- Heat the vegetable broth in medium saucepan.
- Heat oil in large pot over medium high heat.
- Add onion, celery, carrot and pepper. Sauté 3-4 minutes to soften and season with salt and pepper.
- Add garlic, oregano and sauté 30 seconds.
- Add the broccoli along with the hot broth and bring to a boil. Lower temperature and simmer 30 minutes.
- Add noodles and cook 15 minutes. Season with salt, pepper and serve.
