Ingredients
- 1 baguette, cut into 24 thin slices
- ¼ cup olive oil
- 6 large tomatoes, cut into ¼ inch cubes
- ½ cup basil, thinly sliced
- 3 tbsp. capers
- 1 Tbsp. sherry vinegar
- 2 tbsp. olive oil
- 2 tbsp. lemon peel, grated
- ½ cup shredded mozzarella cheese
- salt and pepper to taste
Preparation
- Preheat oven to 375 ° F.
- Place each slice of bread on a baking sheet. Using a brush, spread each slice of bread with olive oil and season with salt and pepper. Bake 9-11 minutes to brown. In a large bowl, combine tomatoes, basil, vinegar, 2 tbsp. olive oil, lemon peel and mozzarella cheese. Mix well and season cabbage salt and pepper.
