Bruschetta with tomato and capers

Ingredients


  • 1 baguette, cut into 24 thin slices
  • ¼ cup olive oil
  • 6 large tomatoes, cut into ¼ inch cubes
  • ½ cup basil, thinly sliced
  • 3 tbsp. capers
  • 1 Tbsp. sherry vinegar
  • 2 tbsp. olive oil
  • 2 tbsp. lemon peel, grated
  • ½ cup shredded mozzarella cheese
  • salt and pepper to taste


Preparation

  • Preheat oven to 375 ° F. 
  • Place each slice of bread on a baking sheet. Using a brush, spread each slice of bread with olive oil and season with salt and pepper. Bake 9-11 minutes to brown. In a large bowl, combine tomatoes, basil, vinegar, 2 tbsp. olive oil, lemon peel and mozzarella cheese. Mix well and season cabbage salt and pepper. Place tomato mixture on each slice of bread and enjoy immediately.
