Ingredients
- 1 lb. fusili pasta of various colors
- 1/2 cup dried tomatoes
- 1/4 cup black olives, sliced
- 1 Tbsp. capers
- 1/4 cup white balsamic vinegar
- 1/3 cup olive oil
- 1/2 cup cooked corn
- 1 cup cherry tomatoes, cut into quarters
- 1 cup fresh mozzarella cheese, diced
- 1/4 cup basil, chopped
- 1/4 cup parsley, chopped
- salt and pepper to taste
Preparation
In a blender, combine tomatoes, olives, capers, vinegar and olive oil. Blend well and set aside.
Cook pasta in plenty of boiling water as directed on package and drain well. Spend the dough to a large bowl and add dressing. Mix well and add the corn, tomatoes, cheese and herbs. Enjoy hot or cold environment on time.
