Ingredients
10 thin slices of roast beef, about 4 inches in diameter (6 oz package)
1/4 cup spreadable cheese with garlic and herbs (from a pack of 4 to 6.5 oz)
1/4 cup red bell pepper, finely chopped
2 cucumbers, unpeeled, cut into 40 slices
Preparation
1. Open each slice of meat to lie flat. Spread each slice with 1 teaspoon cheese and 1 teaspoon of red pepper. Carefully roll up. 2. Cut each roll into 4 pieces. Place each roll of meat on a slice of cucumber. Serve immediately.
