Spring Summer Squash

Ingredients


  • 1 Tbsp. olive oil
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 2 zucchini, cut into 1-inch pieces
  • 1 cup canned chopped tomatoes
  • ½ cup frozen peas
  • ½ cup chopped cilantro
  • salt and pepper to taste


Preparation


  • Heat a skillet over medium high heat. 
  • Add onion and saute 2 minutes. 
  • Add garlic and zucchini. Saute 3 minutes add the tomatoes and peas. 
  • Kitchen 8 minutes and season with salt and pepper. 
  • Serve with cilantro.
