Ingredients
- 1 Tbsp. olive oil
- ½ onion, chopped
- 2 cloves garlic, minced
- 2 zucchini, cut into 1-inch pieces
- 1 cup canned chopped tomatoes
- ½ cup frozen peas
- ½ cup chopped cilantro
- salt and pepper to taste
Preparation
- Heat a skillet over medium high heat.
- Add onion and saute 2 minutes.
- Add garlic and zucchini. Saute 3 minutes add the tomatoes and peas.
- Kitchen 8 minutes and season with salt and pepper.
- Serve with cilantro.
