Ingredients
- Lemon Dressing and Dijon mustard
- 1/4 cup low fat mayonnaise or salad dressing
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 1 clove garlic, finely chopped
Salad
- 4 cups romaine lettuce, shredded
- 2 cups cooked chicken breast, shredded
- 1/4 cup dried tomatoes in oil, sliced and drained (sun dried tomatoes)
- 1 boiled egg, chopped
- 2 medium green onions, sliced (2 tablespoons)
- 1/4 cup grated Parmesan cheese, optional
Preparation
1. Prepare the dressing of lemon and Dijon mustard. In small bowl, whisk all ingredients with a wire whisk.
2. Arrange on individual plates romaine lettuce, chicken, tomatoes and egg. Serve over dressing of lemon and Dijon mustard. Sprinkle with onions and cheese.
