Ingredients
- 8 oz pasta (multigrain) angel hair
- 4 cups fresh spinach
- 1 and 1/2 cups cherry tomatoes (cherry tomatoes), middle
- 3 teaspoons vegetable oil
- 1 medium onion, finely chopped
- 1 and 1/2 lb. medium shrimp, peeled, deveined and tails
- 3 cloves garlic, finely chopped
- 1/4 cup crushed red pepper (red pepper flakes)
- 1/2 cup of dry wine
- 1/4 cup chicken broth Progresso ® reduced-sodium
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons chopped fresh parsley
- 2 tablespoons butter
Preparation
1. In a saucepan, cook the pasta. Strain and return it. Add spinach, tomatoes (tomatoes) and 2 teaspoons oil. Cover and keep it warm.
2. In a skillet, heat remaining oil over medium high heat. Add the onion and mix for one minute. Add shrimp, garlic and crushed. Cook and stir for 2 minutes.
3. Add wine, broth, salt and pepper, cook 2 minutes or until shrimp are pink and firm. Remove from heat, add the parsley and butter until melted. Stir in shrimp mixture to the pasta in the pot. Serve.
